Morbier is a French cow’s milk cheese named for the small town it was created in. The wheels of Morbier are recognizable by the horizontal line of vegetable ash that runs through them. Today, the layer of ash is purely ornamental, and isWheels of Morbier are aged for at least sixty days, during which time it takes on a classically stinky odor. Although the paste smells pungent, it has a mild and nutty flavor that is very enjoyable. Add it to your cheese platter as a gent le introduction to the genre of stinky cheeses.
