The King of Cheeses is aged by Luigi Guffanti for 5 years! This “cru” Parmigiano Reggiano is selected by Guffanti in “toll” (cheese factories dedicated to the “King” of Italian cheeses) in the provinces of Parma, Reggio Emilia and Modena. With milk taken exclusively from small dairies, this limited production parm is truly special. From spring to autumn, cows graze on high hills and mountains eating pasture grass from altitudes up to 700 – 800 meters. This gives the milk strong organoleptic qualities. The taste is harmonious, dry and intense with notes of herbs. Serve this special cheese with full-bodied or aged red wines. Complements fresh fruit, particularly Kaiser pears, pumpkin mostarda, balsamic vinegar of Modena and homemade bread.

When great-grandfather Luigi Guffanti, in 1876, began to age Gorgonzola cheese, his brilliant intuition was to purchase an abandoned silver mine in Valganna, in the Varese province. In the mine, with its temperature and humidity constant year-round, the cheese matured so well that Luigi quickly cornered the markets: his sons, Carlo and Mario, at the beginning of the 1900’s, exported as far as Argentina and California, lands of Piedmont and Lombard emigration. Maximum attention to the handcrafted quality of the cheeses and passionate care taken in the refinement process mark the proud Guffanti-Fiori family tradition that has been handed down for five generations.
