Pecorino Romano is a firm cheese, which is made from full fat sheep’s milk. It is slightly pungent when used as a table cheese. It has a pleasant strong pungent taste when mature for over 5 months and used for grating and seasoning. The most important factor in the Sardinian dairy industry is that their raw milk, is produced in an unspoilt environment which guarantees that the milk produced in Sardinia is uncontaminated by industrial pollution. This is more important to the genuineness of the final product than even our production techniques. In fact in milk, more than in other products, the quality, the value and even the taste depends directly on the animal’s habitat and on what it eats. The cool Mistral winds, the unspoilt pastures in an unchanged countryside and the lack of heavy industry in Sardinia, guarantees that this product is genuine, natural and meets the highest nutritional standards. The production of cheese in Sardinia is as old as this ancient island. The local shepherds used to eat the cheeses and milk products that they produced, during the long period they spent shepherding their animals in the open countryside of Sardinia.
